For such a short ingredient list, this 25-minute pasta dish is bursting with irresistible flavors, thanks to the tasty Roma Cooked Sliced Italian Sausage. The beauty of this dish is that you throw everything into one pot and let it all cook together, which infuses every bite with these flavors. Brilliant for quick comfort food!
1 package of Cooked Sliced Italian Sausages
2 pounds of cherry or grape tomatoes, halved
12 ounces of pasta of your choice
½ cup of Basil (roughly chopped)
½ cup of Rapini (roughly chopped)
3 Garlic Cloves (large, thinly sliced)
1 large onion
¼ cup Extra-Virgin Olive Oil
28 oz (800 ml) passata, also known as tomato puree
½ cup of Parmigiano cheese (finely grated, plus more for garnishing)
¾ teaspoon Red Pepper Flakes (crushed)
Salt and pepper to taste
In a large pan or skillet, add some olive oil. Sauté the onion, 1 pack of Roma cooked sliced Italian sausage, cherry tomatoes, and garlic over medium-high heat for about 5 minutes or until fragrant and crispy.
Bring salted water to a boil. Cook the pasta according to package directions.
Add the passata, roughly chopped rapini, basil, salt, and pepper to the pan. Let it simmer over medium-low heat for 10-15 minutes while the pasta cooks.
When the pasta is done, swirl it around the pan until covered in sauce. Add some Parmigiano cheese and mix well.
Serve with fresh basil and some extra grated Parmesan. Enjoy!
If your pasta sauce is too thick, you can add in some of your pasta water to help thin it out. Serve with a simple loaf of crusty bread and a bottle of wine.
