In this dish, the sausage plays the crouton to become a nice appetizer.
Each bite consists of a delicate stack of basil leaves, minced fennel, orange and parmesan shavings, which give a salty edge to the usual garnish. We sprinkle with a few drops of homemade spiced honey to tang it up.
15ml (1 tbsp.) honey
1 ml ( 1/4 tsp) crushed pepper flakes
1 parmesan salamino, cut into 12 bevelled slices about 3 mm ( in.) thick (see note)
12 small basil leaves, torn
1/4 fennel bulb, minced
12 shavings of parmesan cheese
1 orange, peeled, supremes lifted and cut in half Fennel leaves (optional)
In a small bowl, combine honey and chilli.
2 Place the sausage slices on a serving platter. Scatter over basil, fennel, cheese, orange and fennel fronds, if desired. Drizzle with spiced honey. Serve immediately.
Using a gluten-free salamino such as Parmigiano Roma is a good option for an original canapé without bread or crackers that will cater to your guests’ food intolerances.
