Stuffed Zucchini Recipe

What’s better than a single platter for dinner? Inspiring to eat healthy always staying easy, but above all, tasty with our sausage meat.

Here is a recipe for zucchinis stuffed with Italian sausages and spices that will delight you. It is composed of zucchini, tomatoes, onion, spices and sweet sausages. Easy to make, these zucchini will go very well with your friends! You can easily reproduce this recipe with other vegetables such as round zucchini or bell pepper.

INGREDIENTS

4 zucchini or red peppers, cut in half lengthwise

1 pack mild sausage or Bella Vita, casing removed

½ onion, finely chopped

2 tomatoes, diced

½ cup feta, crumbled

1 tbsp. olive oil

2 tsp. fresh oregano, finely chopped

PREPARATION

Preheat oven to 350°F.

Using a spoon, scrape out the centre of the zucchini. Coarsely chop the flesh.

Heat olive oil in a pan over medium heat. Cook the sausage, chopped zucchini flesh and onion for 4-5 minutes, until the sausage is cooked through.

Drain.

Remove from heat and stir in the diced tomatoes, feta and oregano

Stuff the zucchini with the sausage mixture.

Place zucchini on a baking sheet and bake 8-10 minutes

Turn setting to broil and cook another 2-3 minutes.

BONUS

In order for the stuffed zucchini not to be overcooked (that is, crispy), they must bake in the oven while the stuffing is being prepared.
