These viral smash burger tacos with spicy mayo and a special Italian style giardiniera sauce (salsa fatta in casa) by Culineri, combine two favorites to make the perfect Tex-Mex dish with an Italian twist. Our Romaburger patties, some provolone cheese and tortillas are all you need to make these crunchy cheesy taco burgers. For the tacos: 1 package of Romaburger
1 package of tortillas (corn or flour)
Provolone cheese, sliced
Pickled eggplant, optional
For the giardiniera sauce (salsa fatta in casa): ½ cup apple cider vinegar or white wine vinegar
½ cup olive oil
Garlic clove, minced
1 big onion, diced
1 bell pepper, diced
1 big tomato, diced
½ cup pickles, sliced
½ cup green peperoncini pickled peppers, sliced
¼ cup fresh parsley, chopped
¼ cup fresh coriander, chopped
Salt and pepper to taste
For the spicy mayo: ½ cup mayo
¼ tsp paprika
Chili flakes to taste
¼ cup chili peppers
1 tbs lime or lemon juice
A pinch of lemon zest
Salt and pepper to taste
For the salsa fatta in casa. In a medium bowl mix together the pickles, tomato, bell pepper, pickled peppers, onion, garlic, parsley, coriander, vinegar, olive oil, salt and pepper to taste.
For the spicy mayo. In a small bowl mix together mayo, paprika, chili flakes, chili peppers, lemon juice, lemon zest, salt and pepper.
Now for the taco burgers. First, heat some olive oil in a large pot.
Lay out tortillas and flatten the Romaburger onto the tortilla.
Place a large non-stick grill or pan over medium high heat and then place the tortillas meat side down on the pan. Allow that to cook for about 5 minutes.
Flip tortillas over and add the provolone cheese. Allow to cook for an additional 2 minutes approx. Place a lid on the tortilla so the cheese melts faster.
Once cheese is melted top tacos with spicy mayo, giardiniera sauce, and some pickled eggplant.
When pressing down your tortillas, aim to spread the Romaburger thinly. This guarantees faster cooking and crispy edges!
