1 spicy Italian Roma sausage
1 ciabatta bread, cut in half
2-3 slices provolone
Pieces of roasted red pepper
Optional toppings: basil, olives, hot peppers, marinated eggplant, etc.
Place the sausage in a small saucepan and cover with water. Bring to a boil over high heat. When the water is boiling, prick the sausage with a fork several times to release the fat during cooking.
Boil sausage for 5 minutes, or until at least half cooked.
Preheat the panini press or skillet on the stove. Cut the sausage in half lengthwise. Place the sausage on the press, cut side down, and cook until cooked through, about 5 minutes.
Place the cheese on the bread, add the sausage and garnish with pieces of red pepper. Add other toppings, if desired. 5. Close the sandwich and toast it until the bread is crispy.
Feel free to add more to the panini and have it your way!
