Pasta Salad Recipe with Pepperoni and Cheese

Nothing better than a good recipe for pasta salad with pepperoni and cheese to satisfy the whole family during the summer!

During the hot season, it can be difficult to eat hot and heavy meals. Many turn to simple and quick solutions such as sandwiches and salads. This cold salad is an excellent option for lunch or dinner on hot days. INGREDIENTS

500 g fusilli or penne pasta

4 coloured bell peppers, diced

250g of Roma Pepperoni

1 tablespoon extra virgin olive oil

2 red onions, chopped

1 package of cherry tomatoes, cut in half

2 teaspoons of honey

¼ cup white wine vinegar

Garlic salt to taste

For the Italian salad dressing: 3 tblsp. extra virgin olive oil

2 tblsp. white wine vinegar

4 French shallots, finely chopped

¾ cup of Parmigiano Reggiano cheese or fresh mozzarella

Season with salt, pepper and a pinch of fresh basil to taste

PREPARATION

In a large pot, bring the pasta water (6L) to a boil on high heat. Add salt to make the water boil faster. When the water is boiling, add the pasta and cook it on a low heat.

While the water is boiling, chop and cut up all the vegetables (peppers, onions, cherry tomatoes). Set the tomatoes aside to be added at the very end.

Grate the fresh Parmesan cheese and keep about a quarter aside.

While you cook the pasta, sauté the peppers in a large skillet until tender. Then add the onions and continue to cook until the peppers are golden and the onions are translucent. Add honey and ¼ cup of white wine vinegar and reduce until the mix in your skillet is almost dry.

Drain and rinse the pasta.

Let everything cool, but don’t wait until everything is cold to stir.

When everything is warm, in a large mixing bowl, combine the warm pasta, Parmesan, onions and peppers. Let it sit for a few minutes and prepare the vinaigrette, in the meantime.

Finely chop the French shallot and add it to the olive oil and white wine vinegar

Add the homemade Italian dressing to the pepperoni pasta salad, stir, then add the cherry tomatoes, remaining Parmesan, fresh basil, pepper, pepperoni and salt to taste. Toss again and serve immediately, or keep refrigerated for later.
