It is a soup that tastes of Italy, the sun and the Mediterranean. Soups are our favorite this season – they’re hot, flavorful and easy to make together. This is a low carb soup recipe that only requires basic ingredients and is packed with flavor! The good thing about this recipe is that you can customize the ingredients to your liking. It’s great, with mozzarella and extra pepperoni.
15 ml (1 tablespoon) canola oil
1 minced onion
310 ml (1 1/4 cup) sliced mushrooms
1 diced green pepper
150g of sliced pepperoni Bella Vita
1 can of diced tomatoes 398 ml
625 ml (2 1/2 cups) beef broth
Salt and pepper to taste
30 ml (2 tablespoons) basil leaves
125 ml (1/2 cup) grated mozzarella
In a saucepan, heat oil on medium heat. Cook the onions for 4 to 5 minutes
Add mushrooms and pepper to the saucepan and cook for 2-3 minutes.
Add pepperoni, diced tomatoes with their juice and beef broth. Add salt and pepper. Bring to a boil and cook for 5 minutes.
When serving, garnish with basil and mozzarella.
