1 440 g pack of Roma’s Romaburgers
1 tablespoon (15 ml) olive oil
1 onion, diced
1 carrot, diced
1 celery branch, diced
2 teaspoons (10 ml) chopped garlic
½ 227 g container of white mushrooms, diced
2 tablespoons (30 ml) whole purpose flour
1 cup (250 ml) chicken broth
2/3 lb (300 g) pastry dough
1 cup (250 ml) shredded cheddar cheese
1 egg yolk, whisked with a little water
Salt and pepper to taste
Preheat oven to 350 °F (180 °C)
In a pan, heat olive oil over medium heat. Cook the Romaburgers from 5 to 7 minutes, breaking up the meat.
Add onion, carrot, celery, garlic and mushrooms. Continue cooking for 3 to 4 minutes, stirring regularly.
Sprinkle in flour then cook for 1 minute while stirring.
Pour the chicken broth and season with salt and pepper. Bring to a boil, then let simmer for 2 to 3 minutes over medium heat. Remove from heat.
Divide the pastry dough into four equal parts. On a work surface sprinkled with flour, roll out each piece of dough into a circle of the same diameter as the ramekins.
Divide the sausage mixture into four ramekins and top with cheddar cheese. Brush the edges of the ramekins with egg wash. Place the dough circles on top of the sausage mixture, then press it around the edges of the ramekin to seal. Brush the dough with egg wash.
Bake in the oven for 25 to 30 minutes, until the pies are golden brown.
This recipe is also delicious when made with sweet Italian sausages!
