Couscous with merguez sausage is one of the many variations of couscous recipes that can be found. It is a recipe that is not halal, unlike traditional couscous recipes from Maghreb countries. Feeding your family well is a daily challenge. We seek balance, flavor and variety. This smoked sausage couscous recipe meets your expectations for a nutritious and tasty meal! For a more refined version, replace the merguez sausages with Italian or fennel sausages.
1 pack of merguez sausage, blanched and cut into chunks
2 tbsp. olive oil
2 cups (500 ml) chicken broth
½ cup (125 ml) raisins of your choice
1/3 cup (75 ml) chopped fresh cilantro
2 cups (500 ml) medium-sized couscous (or Israeli couscous)
Salt and pepper
In a saucepan or large skillet, brown sausages in the oil
Add broth, raisins, and half the cilantro.
Bring to a boil and add the couscous. Stir Cover and remove from heat. Let stand for 5 minutes. Adjust the seasoning.
Sprinkle with the remaining cilantro and serve.
Be sure not to overcook your couscous as it only takes 5 minutes to cook.
