These Italian croissan’wiches have two types of lunch meat, pesto and lettuce, for a meal full of flavor. Cold sandwiches like this make a quick and easy lunch or light dinner. They’re great all year round, but they’re especially good during the summer as a no-bake dinner. One of the best things about sandwiches is how easy they are to prepare. So if you’re making sandwiches for a group, everyone can choose what’s on theirs and make it the way they want.
4 croissants
30ml (2 tablespoons) pesto
8 leaves of red curly romaine lettuce
8 slices of Roma capicolli mild
12 slices of Roma pepperoni
Slice the croissants in halves.
Spread the insides with pesto.
Garnish with lettuce, two slices of capicolli and four slices of pepperoni.
Close the croissants.
Heat the croissant for 4-5 minutes in a conventional oven or 2-3 minutes in a toaster oven for a crunchier taste.
