1 450 g pack of Roma mild Italian sausages
1 175 g package of Roma cooked sliced merguez sausages
1 175 g package of Roma cooked sliced mild Italian sausages
1 tablespoon (15 ml) olive oil
2/3 cup (160 ml) cider
1 tablespoon (15 ml) Dijon mustard
½ cup (125 ml) milk
1 250 g packet of cream cheese, softened
1 ½ cup (375 ml) shredded raclette cheese
1/3 cup (80 ml) sour cream
1 cup (250 ml) shredded mozzarella cheese
3 half-bell peppers in various colours, diced
1 baguette, sliced
Preheat oven to 350 °F (180 °C).
Remove the casing from the sausages, then break up the meat into small pieces.
In a pan, heat the oil over medium heat. Cook the sausage meat from 5 to 7 minutes. Transfer about 1/3 cup (80 ml) of sausage meat in a bowl and set aside.
Add the cider and mustard in the pan. Bring to a boil while stirring, then heat until the liquid has evaporated completely.
Pour in the milk and bring to a boil. Stir in the cream cheese.
Reduce heat to low. Gradually add the raclette cheese and cook for 2 to 3 minutes, until the mixture has thickened. Remove from heat and stir in sour cream.
Pour the dip into a small baking dish and smooth the surface. Top with reserved sausage meat, then cover with mozzarella.
Bake for 20 to 25 minutes.
Serve dip with bell peppers, baguette slices and cooked sliced sausages.
