Like the old-fashioned Capicolli, the Coppa is produced in the traditional Italian method from hand-trimmed boneless pork shoulder. It is the original Italian dry-cured Capicolli, with the recipe calling for a spice mix massage and a curing process to work in the meat. Great in all antipasto trays
