Ingredients

  • 1 package (375 g) of ROMA Chorizo Sausage, casings removed
  • Corn tortillas

Salsa

  • Corn kernels, to taste (frozen or canned)
  • 3 green onions, chopped
  • 2 to 5 tbsp lime juice
  • 1 tsp cumin
  • Fresh cilantro, chopped, to taste

Toppings

  • 1 red onion, thinly sliced, to taste
  • Lettuce, to taste
  • Fresh cilantro, to taste

Directions

For the salsa

  • Mix the corn, green onions, lime juice, and cumin. Set aside.

For the meat

  • Cook the sausage meat in a skillet over medium-high heat until crispy and fully cooked.

Assembly

  • Warm the tortillas, then fill with sausage, corn salsa, lettuce, red onion, and fresh cilantro.
  • Add hot sauce, to taste.
