Homemade  Pepperoni  Pizza  Pockets

Ingredients

  • About 1/4 lb (125 g) of Roma mild pepperoni or cooked sliced sausages
  • About 1 1/3 lb (600 g) pizza dough
  • 3/4 cup (180 ml) pizza sauce
  • 1/2 orange bell pepper, diced
  • 1 small onion, thinly sliced
  • 1 cup (250 ml) shredded mozzarella cheese
  • 1/2 cup (125 ml) freshly grated Parmesan
  • 1 tablespoon (15 ml) olive oil
  • 2 teaspoons (10 ml) dried Italian herbs

Preparation

  • Preheat oven to 400 °F (205 °C).
  • Divide pizza dough into eight parts, then roll them into balls. On a work surface, stretch the dough balls into circles of about 6″ (15 cm) in diameter.
  • In a bowl, mix pizza sauce, pepperoni, bell pepper, onion, mozzarella and Parmesan.
  • Divide mixture between four of the dough circles. Cover with the remaining circles and seal the edges with a fork.
  • Place the pizza pockets on a baking sheet lined with parchment paper. Brush with oil, then sprinkle with Italian herbs.
  • Cook in the oven for 20 to 25 minutes.
