Cocktail  Sausage  and  Shrimp  Skewers

Ingredients

Herb Oil

  •  125 ml (½ cup) olive oil
  • 1 garlic clove, crushed
  • 15 ml (1 tbsp) lemon juice
  • 1 handful fresh cilantro and/or oregano
  • Salt and freshly ground black pepper, to taste

Skewers

  •  8 Roma Mild Italian cocktail sausages (available in summer only)
  • 8 large raw shrimp, peeled and deveined
  • 1 zucchini, sliced into half-moons
  • 1 small red onion, cut into wedges

Instructions

  1. Soak 4 wooden skewers in water for at least 10 minutes.
  2. Meanwhile, combine all herb oil ingredients in a blender and blend on high for 1 minute. Set aside.
  3. Preheat the grill to high and lightly oil the grate.
  4. Thread the cocktail sausages, shrimp, zucchini, and red onion onto the skewers, alternating ingredients. Brush the skewers generously with the herb oil.
  5. Grill for 2 to 3 minutes per side, or until the shrimp are opaque.
