Cocktail Sausage and Shrimp Skewers

Ingredients
Herb Oil
- 125 ml (½ cup) olive oil
- 1 garlic clove, crushed
- 15 ml (1 tbsp) lemon juice
- 1 handful fresh cilantro and/or oregano
- Salt and freshly ground black pepper, to taste
Skewers
- 8 Roma Mild Italian cocktail sausages (available in summer only)
- 8 large raw shrimp, peeled and deveined
- 1 zucchini, sliced into half-moons
- 1 small red onion, cut into wedges
Instructions
- Soak 4 wooden skewers in water for at least 10 minutes.
- Meanwhile, combine all herb oil ingredients in a blender and blend on high for 1 minute. Set aside.
- Preheat the grill to high and lightly oil the grate.
- Thread the cocktail sausages, shrimp, zucchini, and red onion onto the skewers, alternating ingredients. Brush the skewers generously with the herb oil.
- Grill for 2 to 3 minutes per side, or until the shrimp are opaque.
