Sausage,  Halloumi  and  Cranberry  Bites

Ingredients

  • 150 g of fresh or frozen cranberries
  • 45 ml (3 tbsp) of water
  • 30 ml (2 tbsp) of maple syrup
  • 1 package (375 g) of White Wine & Italian Spices ROMA sausages
  • 15 ml (1 tbsp) of olive oil
  • 225 g to 250 g of halloumi cheese
  • Black pepper, to taste
  • Chopped chives or parsley, for garnish
  • Toothpicks or small skewers

Preparation

  • In a small saucepan, combine the cranberries, maple syrup, and water. Heat over medium for 5 to 7 minutes, just until the cranberries become glossy and slightly softened.
  • Add the maple syrup 2 minutes before the end of cooking.
  • Remove from heat and let cool slightly.
  • Place the sausages in a skillet over medium heat with a drizzle of oil.
  • Cook for 10 to 12 minutes, turning regularly, until nicely browned and fully cooked. Remove from the pan and let rest for 2 to 3 minutes.
  • Cut the halloumi into cubes about the same size as the sausage pieces.
  • In the same pan, add a drizzle of oil if needed, then brown the halloumi cubes for 1 to 2 minutes per side. The cheese should be golden on the outside and still soft inside.
    Lightly season with pepper. Do not add salt, as halloumi is naturally salty.
  • Cut each sausage into thick pieces, about 2 to 3 cm long.
  • Assemble each bite on a toothpick in this order: a piece of sausage, a cube of halloumi, and a cranberry on top.
  • Arrange on a serving platter and sprinkle with chopped chives, if desired.
