Ingredients

  • 1 package (175 g) ROMA 88 Pepperoni
  • 450 g (1 lb) store-bought pizza dough
  • 1 container (200 g) bocconcini balls
  • 1 pint (283 g) cherry tomatoes
  • Olive oil for brushing
  • Store-bought marinara sauce
  • Fresh basil, torn or chopped (optional)

Preparation

  • Preheat the grill to medium heat, approximately 190 to 205°C (375 to 400°F).
  • Divide the pizza dough into golf-ball sized pieces, then stretch each piece slightly.
  • Thread the ingredients onto skewers, alternating between a piece of dough, a slice of pepperoni, a bocconcini ball, and a cherry tomato. Repeat until the skewers are well-filled, leaving a little space between the ingredients to ensure even cooking.
  • Lightly brush the skewers with olive oil. Place them on the grill and cook for 8 to 10 minutes, turning them every 2 minutes. Continue cooking until the dough is golden brown, the cheese has softened, and the tomatoes begin to blister.
  • While the skewers are cooking, heat the marinara sauce in a small saucepan.
  • Arrange the skewers on a serving platter. Garnish with fresh basil, if desired, and serve immediately with the warm marinara sauce for dipping.
