Canning: an ancient technique
Canning is a very old practice that allows us to prepare food with fresh food and store it for later consumption. This technique allows you to can almost any food, including:
- Vegetables,
- Fruits,
- Sauces,
- Dishes, or
- Soups.
Note, however, that it is not recommended to can dairy products, tofu, pasta, and rice. In fact, during sterilization, the starch will continue to grow.
Canning Tips
To preserve your food, you need to use glass jars. Also, make sure you always follow the sterilization process. To do this, immerse them in boiling water for about 10 minutes. You will also need to sterilize the metal rings and lids.
To prevent it from dripping around the edges, use a funnel. Between the contents and the lid, make sure it has an air gap, as the food will expand at the time of canning, then seal the lid properly.

Meal Soup with pancetta
Nothing beats a comforting soup in winter! And why not prepare a larger amount in advance to enjoy whenever you want? Here is a meal soup recipe that will warm up your cold winter days.
Ingredients:
- 3 cups of split peas
- 1 chopped onion
- 2 cups carrots cut in slices
- 2 leeks finely chopped
- 8 cups of vegetable broth
- 1 cup of diced Roma pancetta
- 1 bay leaf
- Salt, pepper
Preparation:
- Heat oil in a pot and sauté the onion;
- Add the carrots and leeks and sauté for a few minutes;
- Then add the split peas, pancetta and bay leaf, cover with broth;
- Simmer for about 30 minutes;
- Once cooked, serve hot in jars prepared for canning.

Meat sauce
Whatever the time of year, we are always happy to have a delicious pasta sauce from the freezer to make a gourmet pasta dish. In addition to being a friendly dish loved by all, it is very simple to prepare when needed! Here is an excellent homemade meat sauce recipe.
Ingredients:
- 1.5 kg of Roma fennel sausages
- 2 chopped onions
- 1 cup carrots cut in slices
- 2 cups tomato purée
- 2,400 ml fresh or canned crushed tomatoes
- 1 tablespoon of thyme, rosemary, and basil
- Salt, pepper
Preparation:
- Sauté the sausages in a frying pan until soft, cut into slices, set aside;
- In the same pan, add the onions and carrots and sauté them in the oil;
- Add the tomato paste and cook for 1 minute;
- Add meat, tomatoes and herbs, pepper and salt to taste;
- Let it simmer for several hours, before canning.

Stewed sausages and vegetables
The stewed sausages and vegetables is a homemade recipe easy to make, and delicious to eat in winter!
Ingredients:
- 2 cups rutabaga peeled and cut into cubes
- 3 carrots, peeled and sliced
- 3 yellow potatoes cut into cubes
- 250 g mushrooms cut into slices
- 600 ml of tomato coulis
- 284 ml of undiluted chicken broth
- 450 g of your favorite Roma sausages
- Basil leaves
Preparation :
- Insert the vegetables, broth and tomato coulis into your slow cooker. Add pepper and salt. Close the lid and cook at low temperature for about 8 hours;
- Make Roma sausage meatballs and stir in the slow cooker. Close and cook at high temperature for 30 minutes;
- Add some basil and you’re ready for canning.
