Ingredients
- 6 pork sausages with fennel
- 2 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 3 tsp. honey mustard
- 1 red onion, sliced into rings
- 1 red pepper, sliced into rounds
- 1 yellow pepper, sliced into rings
- salt and pepper
Preparation
- In a small bowl, combine the oil, vinegar, and mustard. Season with salt and pepper.
- Set the barbecue to medium power. Brush the sausages with half of the vinaigrette, then place them on the oiled grill. Cook until the sausages are golden-brown on the outside and well-cooked on the inside.
- Thread the onion rings onto skewers. Brush the onions and peppers with the remaining dressing. Grill them on the oiled barbecue until tender.

Pepperoni, Brussels sprouts, and mozzarella sandwich

Ingredients
- 1 lemon
- 1 sliced Caserta pepperoni sausage
- 6 oz. Brussels sprouts, thinly sliced

- 1 cup grated mozzarella cheese

- 2 Tbsp. olive oil
- 1 tsp. butter
Preparation
- Grate the lemon to obtain 1 tsp. of zest, then squeeze it to obtain 2 Tbsp. of juice. In a frying pan, cook the Brussels sprouts in olive oil until tender, then add the pepperoni slices. Add the pepper and lemon zest.
- Heat the buns on the grill, then brush the insides with butter. Spread the mixture inside and garnish with cheese. Sprinkle with lemon juice, and you have another easy camping recipe!
Omelette with Calabrese sausage and sharp cheese
Whether cooked or dry-salted, Italian-style deli meats are ideal for adding to a panini, antipasto plate, or omelette. Ingredients
- 8 eggs
- 1 Calabrese sausage
- 2 firm-fleshed potatoes
- 2 Tbsp. olive oil
- salt and pepper
Preparation
- Cut the sausage into small pieces. Peel and rinse the potatoes and cook them in salted water for about 15 minutes (they should remain a little firm). Drain, then cut them into cubes.
- Beat the whole eggs with a fork, then add salt and pepper. Heat the olive oil in a frying pan over medium heat, add the potatoes and sausage pieces, and cook for 3 minutes. Pour in the beaten eggs and cook the omelette for about 8 minutes. Cover with sharp cheese and fold the edges in toward the centre. Serve hot.
