Yes. We use nitrites in the salt to cure our product. We add nitrites because it helps to make our product safe by inhibiting growth of bacteria, and it also helps to keep the natural color of the pork.

Nitrates are a natural component of vegetables such as broccoli, cauliflower, celery, beets & spinach, to name a few. All of our charcuterie meats contain some form of nitrates.

Yes. Our pepperonis and cooked charcuteries can be frozen before their expiration date. Note that you don’t have to freeze our dried charcuteries (i.e salamis) since they have a long shelf life in the refrigerator.

We recommend consuming prepackaged cooked and cured charcuteries within 7 days after opening.

If you’re unable to find a product that you have seen on our website, or one that has previously been available in your local grocery store, you can visit our website and click on our product page as it tells you which stores carry the variety you’re after. Alternatively, ask the store’s meat or deli manager if you can place an order.

Our cooked charcuteries have a maximum shelf life of 45 to 60 days, and our traditional dry cured charcuteries have up to 180 days. Please refer to the best before date on packaging.

Great idea when stocking up on your favorite products! We recommend 180 days for our cooked charcuteries. Do not freeze dry cured charcuteries (salamis). These products need to breathe, so you can simply wrap them in butcher paper once opened and it will continue to dry out until the end of its best before date. Always refer to the best before date on packaging.
