Yes, Our Italian sausages, pepperoni and cooked products can be frozen any time prior to the best before date. Note that you do not need to freeze salami type products as they are dried and have a very long refrigerated life.

Yes. We use nitrites in the salt to cure our product. Nitrites are a natural component of vegetables such as broccoli, cauliflower, celery, beets & spinach, to name a few. We add nitrites because it helps to make our product safe by inhibiting growth of bacteria, and it also helps to keep the natural color of the pork. All cured meats contain nitrites in some form. Fun Fact : The potassium nitrate in saltpeter kills Clostridium botulinum, the deadly bacterium that causes botulism. The nitrate also preserved the pink color of the meat.

Our amazing Italian sausages have a maximum shelf life of 18 days so please refer to the best before date on the package. Our authentic cooked charcuteries and pepperoni have a maximum shelf life of 45 to 60 days, and our traditional dry cured charcuteries have up to 180 days. Again, please refer to best before date on packaging.
Great idea when stocking up on your favorite products! We recommend 90 days for our famous fresh Italian sausage and 180 days for our cooked charcuteries. Do not freeze dry cured charcuteries (salamis) . These products need to breathe, so you can simply wrap them in butcher paper once opened and it will continue to dry out until the end of its best before date. Refer to best before date on packaging

Glad you asked. The products are indetical but what differenciates them is the packaging. The vaccuum pack keeps the product more humid and has a 15 days longer shelf life, and the micro perforated package lets the product dry more as it was sold originally.
